Veal Chops in Wine Sauce
(Makes 4 Servings)
4 Veal Chops (1 inch thick)
1 small finely minced shallot
2 finely minced garlic cloves
1 teaspoon finely minced rosemary leaves
1/4 cup red wine
3/4 cup beef stock
2 tablespoons low cholesterol Roux (see Roux recipe)
1 teaspoon chopped fresh parsley
Cooking Instructions
In your hot dry Healthy Life skillet over medium heat, brown chops for 5 to 6 minutes per side until chop
releases from skillet. Transfer chops to a platter and keep warm. Add to drippings, shallots, garlic and
sauté until slightly brown (2 to 3 minutes), then stir in rosemary.
Slowly stir in wine, then stir in beef stock and Roux and keep stirring as stock thickens and reduces
by 1/2.
To serve, top chops with sauce and sprinkle with chopped fresh parsley, Add lemon slices to a bed of
scalloped potatoes.
