Sweet Potato Turkey
(Makes 4 Servings)
4 turkey breast tenderloins
1/3 cup dried cranberries
1/4 cup orange juice
1/3 cup maple syrup
1 tablespoon butter
1/4 teaspoon cinnamon
1 -23 oz. can sweet potatoes in light syrup,
Cooking Instructions
In a large Healthy Life skillet, over medium low heat, place the turkey tenderloins and cover with vapor valve
closed. Cook until the tenderloins release from the skillet and begin to brown and then turn (estimated 7 to 8
minutes per side).
While your turnkey tenderloins are cooking, in a 1 quart Healthy Life saucepan over medium heat, add
cranberries, orange juice, maple syrup, butter and cinnamon and bring to boil. Reduce heat and simmer
for 1 minute. Remove from heat.
After you turn the tenderloins to brown the backside, place the sweet potatoes around the tenderloins and
pour the orange juice mixture over the top of the tenderloins and sweet potatoes. Cover skillet with vapor
valve closed and reduce the heat to simmer. Cook for 10 minutes and then uncover the skillet and cook for an
additional 5 minutes, or until the sauce is slightly thickened and the juice from the turkey is no longer pink
when the centers of the thickest pieces are cut.
To serve place tenderloins on each plate and surround by sweet potatoes. Then pour remaining sauce over
all servings.
