Spicy Skillet Chicken
(Makes 4 Servings)
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts
1 tablespoon olive oil
1 -15 oz. can black beans drained
1 -11 oz. can whole kernel fiesta corn with
green and red peppers, un-drained
1/3 cup salsa
2 cups hot cooked rice
In a small bowl mix chili powder, salt and pepper. Sprinkle evenly over both sides of the chicken breasts.
In a large Healthy Live skillet, heat olive oil (olive oil spray can be used) over a medium low heat. Cover with
vapor valve closed and cook until the chicken releases from the pan and turn, (estimated 8 to 10 minutes per
side) and continue cooking until the juices run clear when the thickest part is cut.
Stir in beans, corn and salsa, bring to simmer and cover with vapor valve closed. Continue cooking for 5
Serve over rice.
