Panko Crusted Garlic Orange Tilapia
(Makes 4 Servings)
1/2 cup all-purpose flour
2 tablespoons chili powder
1 tablespoon kosher salt
1 teaspoon coarse ground pepper
1 1/2 cups panko bread crumbs
8 tilapia filets
1/3 cup extra virgin olive oil
4 cloves garlic thinly sliced
1/2 cup basil leaves
1 tablespoon finely grated orange peel
Grab 3 small bowls. In the first bowl, mix flour, chili powder, salt and pepper. In the second bowl, add eggs
and beat well. In the third bowl, add bread crumbs. Bread your fish filets by first coating them with the flour
mixture from bowl one, next dip them into the eggs in bowl 2, and finally coat them with the bread crumbs
from bowl 3. After coating the filets set them aside on a platter.
In your large Healthy Life skillet, heat up the olive oil over medium heat. When oil gets hot, add half of the
filets and cook them for 3 to 4 minutes, or until brown and crisp. Turn the fish and cook the other side for 2
to 4 more minutes, or until it is brown and crisp. Remove from skillet and place on a paper towel covered
plate and let drain. Cook remaining filets, adding more oil if necessary.
After fish filets are removed from the skillet, drain the oil and add garlic and jalapeno pepper to the hot
skillet and cook for 2 minutes. Add basil and cook for 1 more minute. Add orange peel and stir. Place the
mixture on a saucer.
To serve, place 2 filets on a plate and top it with the garlic orange mixture. Goes well with long grain rice
on the side.
