Orange BBQ Porkchops
(Makes 4 Servings)
4 center cut pork chops
1 medium diced onion
1 medium sliced onion
4 cloves minced garlic
3 tablespoons tomato paste
1 cup brewed coffee
1 tablespoon light brown sugar
1/8 teaspoon red pepper flakes
1/2 cup orange marmalade
1 teaspoon grated orange zest
1 teaspoon chopped fresh parsley
In a hot, dry Healthy Life skillet over medium heat, brown chops on both sides until they release easily from
the skillet (estimated 4 to 5 minutes per side). Remove chops and keep warm.
Add the diced onion and garlic to the drippings and sauté until slightly brown. Add tomato paste and cook until
paste turns reddish brown. Stir vigorously and do not allow residue on the bottom of the skillet to burn.
Slowly stir in coffee. Add brown sugar, red peppers and orange marmalade and mix well. Return chops to the
skillet and cover with vapor valve open and cook for 8 to 10 minutes.
While the chops are finishing, sauté the sliced onion in your small Healthy Live sauté pan with olive oil.
To serve, place the sautéed onions on a plate with a pork chop on top of the onions, and cover with sauce. Next
sprinkle with orange zest and parsley. Compliment the dish with a side of hash brown potatoes.
