Dijon Chicken and Mushrooms
(Makes 4 Servings)
4 boneless skinless chicken breasts
1/4 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1/2 cup chicken broth
2 cloves chopped garlic
1 -5 oz. jar sliced mushrooms,
1 1/2 tablespoons Dijon mustard
Between 2 pieces of plastic wrap or wax paper, place each piece ofchicken. Using a rolling pin flatten the
chicken to about ¼ inch thickness.
In a large Healthy Life skillet, heat oil to a medium low heat. While skillet is heating, place in a shallow
pan, flour salt and pepper and mix it together. Coat both sides of the chicken with the flour mixture and cook
6 to 8 minutes on both sides, uncovered, until chicken is no longer pink in the middle. Remove chicken to a
serving plate and keep warm.
Stir broth and garlic into skillet and heat on medium heat until the mixture begins to boil. Next stir in
mushrooms and mustard and cook for 3 minutes or until mixture starts to slightly thicken.
To serve place chicken on a bed of brown rice and spoon sauce over the top of the chicken. A nice sautéed
vegetable medley will complement the dish nicely or you can simply add a nice side of green beans.
