Country Style Curried Chicken
(Makes 2 Servings)
2 boneless skinless chicken breasts
cut into 1 inch pieces
Spray olive oil
1 small chopped onion
1/4 cup chopped green bell pepper
1 -14 oz. can diced tomatoes, un-drained
1/4 cup golden raisins
1/2 teaspoon curry powder
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1 can (6) biscuits
3 tablespoons cornmeal
In a 3 quart Healthy Life saucepan over medium heat, spray with olive oil and cook chicken for about 3
minutes stirring occasionally, until center of chicken pieces are no longer pink in the center.
Stir in onions and bell pepper, stirring occasionally for about 2 more minutes until the vegetables are tender.
Next stir in tomatoes, raisins, curry powder, salt and nutmeg, and heat on medium until boiling.
While waiting for your mixture to boil, in a small bowl, break biscuits in half and toll in cornmeal.
When the mixture begins to boil, drop biscuits into the hot chicken mixture and leave floating on top. Reduce
temperature to medium low, cover with valve closed and cook for 10 to 12 more minutes until the
dumplings are done.
