Chicken Cordon Bleau
(Makes 6 Servings)
6 boneless skinless chicken breasts
6 slices of Swiss cheese
6 slices of ham
1 1/4 cups chicken stock
1 tablespoon Low-Cholesterol Roux
1 pinch cayenne pepper
1/2 cup chardonnay wine
1/2 cup half and half
1 tablespoon chopped fresh parsley
With a chef knife, butterfly each chicken breast in half by cutting the breast about 3/4 of the way through
and lay the breast open. Place a slice of cheese and slice of ham on each breast. Trim off excess cheese and
ham and stuff inside the breast. Fold over and secure with a toothpick.
Place the chicken in a medium hot dry Healthy Life skillet. Cover the skillet with the vapor valve open, and
cook until the chicken is golden brown and releases from the skillet. (estimated 7-8 minutes per side)
While the chicken is cooking, combine the chicken stock, Roux and cayenne pepper in your Healthy Life 3
quart saucepan over medium heat. Cook, stirring the Roux into the stock until the mixture thickens slightly
(estimated 3-5 minutes). Remove the saucepan from the heat and set aside. When the chicken is done, transfer
it to a platter and keep warm.
Slowly stir wine in your Healthy life 1 quart saucepan, bring to a simmer and cook until reduced by half
(estimated time 3 minutes). Add reduced wine to stock and cook at medium temperature for 2 to 3 minutes
untilstock thickens. Next stir in half-and-half and cook for 1 more minute.
To serve, remove toothpicks from chicken. Top the chicken with sauce, sprinkle with parsley and serve with
your favorite waterless vegetable.
