(Makes 4 Servings)
8 skinless chicken thighs
1 medium diced onion
1 medium diced carrot
1 stalk of diced celery
1 clove minced garlic
1 tablespoon Mrs. Dash original seasoning
1/2 tablespoon course ground black pepper
1/2 cup port wine
1/2 cup sliced mushrooms
1 cup chicken stock
4 medium chopped Roma tomatoes
1/2 pound linguini
2 tablespoons freshly grated parmesan cheese
2 tablespoons chopped fresh basil
Place chicken in a hot dry Healthy Life skillet over medium heat. Cover the pan with the vapor valve open
and cook until golden brown (estimated 7to 8 minutes per side). Remove chicken from skillet and keep warm.
Add the onion, carrot, celery and garlic to the skillet and sauté in drippings until slightly browned, stirring
occasionally (estimated 3 to 5 minutes). Stir in the Mrs. Dash seasoning and pepper. Slowly stir in the wine
and simmer until reduced by ½ (estimated 2 to 3 minutes) stirring occasionally.
Add mushrooms, tomatoes and chicken stock. Mix well and reduce heat to medium low. Return the chicken to
the skillet and baste with sauce. Cover the skillet with the valve open and simmer for 15 to 20 minutes.
While chicken simmers, use your Healthy Life 5 quart to cook the linguini as per package directions.
To serve, place drained linguini on a plate with a chicken thigh on top and sprinkle with parmesan cheese
