(Makes 4 Servings)
1 tablespoon seasoning salt
1 tablespoon ground black pepper
1 1/2 teaspoons dried oregano
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground red pepper
2 tablespoons unsalted butter,divided
2 tablespoons olive oil,divided
4 large catfish filets
1/2 cup flour
In a medium bowl, combine seasoning salt, black pepper, oregano, garlic powder, onion powder, and
red pepper. Stir until combined well.
In your large Healthy Life skillet heat 1 tablespoon of butter and 1 tablespoon of olive oil over
a medium-high heat.
Lightly dust catfish with flour and gently shake off the excess. Pat seasoned salt mixture onto catfish.
Working in batches, add catfish to skillet and cook 3 to 5 minutes per side or until fish flakes with fork
when tested. Add additional butter and olive oil to skillet between batches as needed.
