Basil Salmon with Juliene Veggies
Ingredients
(Makes 4 Servings)
4 salmon filets (4 to 5 ounces)
1 tablespoon butter
1 bag frozen bell pepper and onion stir fry (1 pound)
1 large zucchini cut julienne using the
                                                          ultimate salad machine
1 large yellow squash cut julienne using the
                                                          ultimate salad machine
2 tablespoons chopped fresh basil
1/2 teaspoon seasoning salt
1 teaspoon Lemon pepper seasoning
1/2 cup chicken broth
Cooking Instructions
In a large Healthy Life skillet, melt butter over a medium low heat and add the bell pepper stir fry and cook for
2 minutes; stirring occasionally. After the 2 minutes is up stir in zucchini and squash and move the vegetables to
the side to allow room for the salmon.
Place the salmon in the skillet and then spread the vegetables around the salmon. Pour the broth into the skillet
and sprinkle your salmon and vegies with basil, seasoning salt, and lemon pepper.
Cover the skillet with the vapor valve open and cook for 10 minutes or until salmon flakes easily with fork. 10
minutes or until salmon flakes easily with fork.
Remove salmon and veggies from the skillet and serve with dill pickle tartar sauce.
